Credit card security

We are ready and waiting to book our holiday at Holiday Inn Maingate East.
Mum has offered to e-mail her credit card details over the net,this is all the hotel needs as a deposit. How safe is the process as we have never bought anything over the net before. Would like some serious advice on the matter.

We use a secured service with credit cards, and have booked many packages through the Internet without any problems.

On a personal level, I find myself ordering more things through the Internet, and have booked packages for myself, as well as flight arrangements, and purchased personal items. When companies, such as Dreams Unlimited Travel, use these secured methods, there are no problems.
